Others get home from work, too tired to cook, and manage to come up with a quick, delicious meal anyway.
My first-born son falls into the second category.
He invented this salad recently, and it sounded so refreshing and looked so delicious in the photo that I have been inspired to put, not quite pen to paper, but fingers to keyboard, and here is the recipe.
Chicken Mango Salad with Fresh Herbs and a Thai Twist
Serves 1or 2
juice of 1 small lime
1 tsp palm sugar
pinch of dried chilli flakes or more to taste
1 tbsp fish sauce
1 tbsp cold water
1 tsp grated fresh ginger
Mix all the ingredients in a medium-sized bowl and set aside while you make the salad.
3 inch piece of cucumber
1 small carrot
1 chopped spring onion
strips of cooked chicken breast (omit if you’re vegetarian)
handful of fresh mint
handful of fresh coriander
Using a vegetable peeler, cut the courgette into strips. You can work your way round the courgette and leave the seeded part. Place the courgette in a sieve or colander, sprinkle with salt and set aside to drain.
Do the same with the cucumber and either place with the courgette or in a separate colander.
Scrub the carrot and peel into strips as above. No need to drain.
Prepare the mango over a bowl to catch the juices. Remove the peel. Cut the mango in half and working around the stone in the middle, cut off wide slices and place in the bowl. When you have removed as much of the flesh as you can, take what you need for the salad and cut into neat slices. Set aside. Eat the rest later.
Finely shred the spring onion, using the white and the green parts.
Finely chop the mint and coriander and set aside.
Wash the salt from the courgette and cucumber, place on a teatowel or strong paper towel and gently squeeze out as much water as you can. Place the carrot and courgette in the bowl wit the dressing.
Add the rest of the ingredients.
Wash your hands and gently mix everything together.
Divide between 2 small plates or eat it all yourself.
PS You can also add cooked rice noodles to the salad to make it more substantial.
